Wine tourism is increasingly seen as a vibrant and evolving part of Europe’s travel scene, blending culture, food, heritage, landscapes, and local identity. As visitor expectations grow and destinations encounter rising sustainability and competition pressures, innovation becomes crucial for the sector's future growth. The EnoTour project was specifically created to facilitate this shift. Co-funded by the European Union through Erasmus+ Alliances for Innovation, it unites universities, vocational training providers, wineries, tourism organizations, and tech partners to promote digital and sustainable transformations in European wine tourism. Led by Universitat Rovira i Virgili in Spain, the consortium includes partners from Spain, Portugal, France, and Italy—some of Europe’s key wine tourism regions. They are working on developing new tools, training programs, and collaborative methods to support both tourism professionals and wine producers.

The core idea of the project is that wine tourism can become a more powerful contributor to regional growth when education, business, and destination management collaborate more effectively. The initiative aims not only to promote tourism but also to develop long-term skills, foster innovation, and create ecosystems of cooperation. A key achievement of EnoTour is the development of a versatile digital platform that combines training, business support, and visitor engagement tools. This platform features specialised online courses, self-assessment tools for wineries, and virtual experiences to enhance the wine tourism offerings of regions. An especially significant element is the development of MOOCs (Massive Open Online Courses) on topics like wine tourism management, sustainability, digitalisation, gastronomy, food pairing, experience design, and winery business growth. These courses cater to students, professionals, and lifelong learners, aiming to fill skill gaps in the tourism and wine sectors.

Digital transformation is a key aspect of the project. EnoTour helps wineries and destinations assess their digital maturity, enhance online visibility, and develop new visitor engagement methods. It also introduces virtual experience tools for creating immersive storytelling and 360-degree content, which attract visitors before, during, and after their trips. Sustainability is another major focus, with discussions centred on balancing economic growth with environmental responsibility and community wellbeing. Topics like sustainable visitor management, green transition, local development, and responsible tourism are incorporated into training programs and broader activities. The project also aligns with wider trends in European tourism, where travellers increasingly favour authentic, experience-driven, and locally rooted products. Wine tourism is well-positioned to meet this demand through direct connections to local culture, cuisine, landscapes, and producers.

Recent events have underscored how quickly the sector is evolving. At the final EnoTour dissemination event in Porto, experts from academia, tourism organisations, wineries, and digital innovation companies explored the future of wine tourism, emphasising artificial intelligence, sustainability, digital marketing, and visitor experience design. Nearly 100 participants discussed how destinations and wineries can adapt to shifting market expectations. Importantly, EnoTour extends beyond education by actively assisting wineries and tourism businesses through self-assessment tools, collaborative networks, and practical innovation support. This enables smaller producers and regional destinations to become more competitive in an increasingly competitive international tourism market. From a European perspective, the initiative demonstrates how tourism, education, and innovation policies can work together. It aligns with EU priorities on digitalisation, skills development, sustainability, and regional competitiveness, while fostering the long-term resilience of tourism ecosystems.

The project also highlights the growing importance of wine tourism within European tourism strategies. Beyond winery visits alone, wine tourism is increasingly viewed as a tool for regional branding, rural development, cultural preservation, and sustainable destination management. Ultimately, EnoTour illustrates how innovation and cooperation can help modernise one of Europe's most iconic tourism experiences. By connecting education, technology and destination development, the project is helping create a more sustainable, digital and internationally connected future for European wine tourism.
